3 cups flour (sifted)
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 sticks butter, melted & cooled
2 tsp vanilla extract
2 cups sugar
3 eggs
2 cups ripe, mashed banana (about 3 bananas)
8 oz drained crushed pineapple
1 cup chopped walnuts
1 cup coconut (shredded & unsweetened)
In medium bowl, whisk together flour, cinnamon, salt, and baking soda. Set aside. In another bowl, beat butter, vanilla, and sugar together for 2 mins. Add eggs one at a time and beat for 3 mins. In a med bowl mix banana, pineapple, coconut, and walnuts. Add to the egg mixture and mix well. Slowly add the flour mixture. Fill cupcake liners 2/3 full and bake for 25-28 mins at 350 degrees F. Frost with Cinnamon Cream Cheese Frosting.
